But it’s something I made the other day after a farmer’s market trip that was awful good:
Yummy quesadilla’s:
Grill a couple YELLOW corn tortillas with a bit of butter or oil.
Crumble the garlic cheddar on both tortillas.
Shred the left-over chicken from last nights bbq and pile that on one of the tortillas.
Add thinly sliced tomato, avocado & sprouts on top of the chicken.
Sprinkle on the tapatio.
Slap the tortilla w/ cheese only smack on top. Press down with spatula.
Serve sliced in half.
I didn’t do this, but it would probably be good to scoop a dollop of greek yogurt on top.
